What a late post. But anyways, let me greet you guys a happy new year! I’ve been kind of a whiner the start of the year, and you’ll read more about it here. I gave lots of baked stuff to people who deserve it. Joey’s family got home-made granola and a box full of bite size holiday yummies like, chocolate chip cookies, peanut butter squares (tastes like Reese’s peanut butter cups, it was a hit), lemon squares, and food for the gods. I’m trying to figure out why the hell I didn’t even think of taking a photo of all these! I mean really! Joey’s grandma gave me two pairs of shoes and slippers, how sweet.
The holiday was jollier this time around, last year was.. well, kind of boring and sad. I had plans of going to Laoag but didn’t have the guts to run away from domestic duties. Later on I regretted it mainly because no one needed my presence in the house.
Then there was this year (err last year, a.k.a like a week/two weeks ago) and yet again holiday plans didn’t work out well. Plan was to spend either Christmas or New Year in Baguio, because a very sweet family wanted to really adopt me for the holidays. I should give myself a chance by spending Holidays like these with another family with a different set of traditions. I’m quite sure it would be more fun, and hopefully get the chance to know Joey’s cousins (oh man, it’s like a clan) and everybody else better. A chance for me to speak more than 10 sentences or something, because I don’t really get to talk normal when I visit once in a while. Maybe next year I’ll get over my insecurities. I want, or NEED to get over insecurities. It’s imperative that I become a happier and more contented person. My golly gulay, it’s about high time. If only I could vomit you all out from my system, I’d be a less complicated anything. I wish.
Wow, I’ve already too much. Now let me get to the point. My apologies, I didn’t properly document all dishes from Christmas and New Year. I was too busy cooking/baking and really didn’t have plans really to blog about it. But since I had the chance to document some here goes.
The macaroons were one of the many desserts last New Year celebration. This is probably the best tasting macaroons I have ever tasted, not that I’m biased or anything. The second time I made it and it was wonderful still. The texture, the smell, the taste were all consistent. You can never go wrong with this recipe. I suggest you visit Ms. Connie’s site instead. I got the recipe there. May I warn you that these macaroons aren’t any close to tasting like Goldilock’s. If you are looking for moist, chewy, coconutty, and custardy macaroons then these are perfect!
New Year feast consisted of: (counter clockwise starting from the bottom) the ever reliable Roasted Chicken with italian herbs seasoning, Fruit and Vegetable Medley, Steamed Tilapia with Kinchay and Soy Sauce, Pizza, Pochero with the Eggplant side dish, Macaroni Salad, Chips with Home-made Salsa and Mexican Beef toppings, Home-made Kimchi, Rellenong Bangus. Others not included in the picture: Red Ribbon’s Death by Chocolate (seriously don’t know the name of the cake/mousse), Home-made Macaroons, Fruit Salad.
