Seems like I’m stuck in 2009 still because of the photos I’ve been posting. Aside from the late updates, my mentality hasn’t changed and I guess I’m not excited with anything anymore. :/ But, like most days, there will always be turn of events and I’ll find the sunny side of things. Positive things happen. So I tell myself. There, there. Last Friday I (unintentionally, of course) scratched the car in the basement parking of our new office in Ortigas. It was a long scratch, but there weren’t any dents (if that’s any consolation). Feeling pretty bummed out about it, and the irony of this all is, my mom was nonchalant about the whole inciDENT (haha, get it?! hmm nevermind).
These carrot cupcakes go way back last year, possibly around October. I think I was inspired to do some when I watched a 10 minute cooking “commercial” show in QTV (the host sounded so much like Bunny, as in Sailor Moon tagalized version, that irritating ewan voice). The recipe I also got there, and it turned out.. so-so. For my standards it wasn’t a really good recipe, so I guess I wouldn’t even attempt to write down the procedure and ingredients here (also lost the recipe anyway, I threw it thereafter). The carrot cupcakes were moist and not too sweet. The cinnamon flavor could have been strongr though, and I want it to be dense, almost pudding-like, but really, it’s like a chiffon carrot cake, which I didn’t like. Pictures look good though, yehey. People in the house gobbled them up like crazy.
These were also the times where I started having minor breakouts in the center of my universe. I’m glad I bid goodbye to studying my last two subjects, aka math and economics, and saying babye to college days.
I will look for a more reliable Carrot Cupcake recipe with Cream Cheese Frosting. I’ve got to post more stuff here, haay
